As the days start to get colder, it’s so nice to look forward to a warming delicious homemade soup to warm the cockles. Try this one if you have a blender and try to buy organic Veggies for better health.
Makes 2 Bowls:
1 Onion
8 medium sized carrots
Handful of Coriander
1 Large Garlic Clove
Pinch of Salt and Pepper
Dice the Onion and chop the Garlic, heat up a generous glug of Olive Oil in a saucepan and start to stir, then leave to brown a little for around 5 mins on a medium heat. Adding the salt and pepper here. Then, add the chopped carrot.
When nicely browned you want to take off the heat and add two cups of vegetable stock, a handful of coriander and put back on medium heat for 25 mins. After that, blend into a creamy soup and serve with a knob of Organic Butter to extra creaminess and add seasoning to taste.
